Houston Eaves started working in his family’s deli when he was fourteen years old, alongside his father who engrained in him a strong work ethic and genuine hospitality. “My Dad really wanted to make everyone feel at home in his deli,” he says. Another strong influence in Houston’s formative years was his mother, who worked for an airline. She instilled in him a passion for traveling and curiosity for other cultures, which Houston used later to study beverage trends from Costa Rica to the Middle East and many exotic locales in between. Beyond all techniques, Houston remains loyal to the old-world style of handmade, perfectly crafted drinks, which is what he strives to bring to The Esquire Tavern.
As Beverage Director, his top priorities are to maintain the highest level of integrity and commitment to excellence. “I feel privileged to be managing one of the oldest and most notorious bars in Texas, and I’m making sure the quality of our drinks, beer, and cuisine honor The Esquire’s rich tradition,” adds Houston. He is equally thrilled to be working for one of San Antonio’s top management teams during such a progressive time in the industry and is eager to see what the future brings for this team, The Esquire, and the city.
