Tequila Cocktail Recipes: Batman of Mexico (Perfect for Cinco De Mayo)

At The Esquire Tavern, we’re proud to boast some pretty inventive cocktails, created by our own resident Beverage Director, Houston Eaves. From a spin on the Old Fashioned to the innovative Monty Collins, Eaves has served up amazing drinks at The Esquire Tavern for several years now. The most recent addition is the Batman of Mexico, a specialty drink designed for Cinco de Mayo and the upcoming sizzling summer months. 

In 2016, we opened our ground-floor bar, Downstairs, and with that came a whole new menu of delicious cocktails. The Batman of Mexico brings out the floral, herbaceous notes of the distinct agave plant. The drink is Eaves’ own subtle appreciation Mexico’s tequila makers who sustain migratory populations of bats that pollinate the agave to supply cocktails around the nation. The drink is not just a neat shout-out to Bruce Wayne, The Batman of Mexico is aptly named after ecologist Dr. Rodrigo Medellin, who is popularly known as the Batman of Mexico due to his foundation of the Bat Friendly Tequila and Mezcal Project. From this rich background came our newest Summer drink, the Batman of Mexico.

The blend of Summer heat is made from the following:

  • 2 oz. high-proof blanco tequila, such as Siembra Valles
  • ¾ oz fresh corn syrup (recipe below)
  • ¾ oz key lime juice
  • 2 – 3 dashes Bittermens Hellfire Habanero Shrub
  • Combine in an ice-filled shaker and shake well. Strain into a chilled glass rimmed with sal de chapulin (grasshopper salt)

Fresh Corn Syrup recipe:

  • 2 lbs. sweet corn
  • 2 lbs. sugar
  • 32 oz. water
  • Simmer all ingredients for about thirty minutes of medium heat, stirring occasionally until sugar dissolves.
  • Strain syrup into an airtight container and reserve in the refrigerator until ready to use

Our Mas Chingoni Recipe: Inspired By The Negroni Cocktail

The Negroni cocktail is a classic Italian cocktail. A blend of gin, Campari, and sweet vermouth, the Negroni is said to have originated in the 20th century, when an Italian count demanded a bartender replace the club soda in his Americano with gin. Fast forward a couple of hundred years, mixologists at The Esquire Tavern have added a Latin-American twist signature to San Antonio’s roots – introducing the Mas Chingoni. A drink born from the love of unique spirits, the Mas Chingoni provides an extra kick to the traditional Negroni. See the drink mixing in action here. Ready to give the Mas Chingoni a try at home? The Recipe

How do you make the Mas Chingoni?

  • ¾ oz sweet vermouth
  • ¾ oz azul anejo tequila
  • ¾ oz of aperol
  • Grapefruit peel
  • Mix in ice cubes and stir
  • Garnish with grapefruit peel

Our Mas Chingoni gets its name from the Spanish slang word chignon – which essentially means “awesome” or “badass.” Mas chignon is a common phrase used in Tex-Mex Spanish, and frequently heard on the streets of San Antonio. It holds a special place at The Esquire Tavern due to our mixologists’ love for the classic Negroni. It blends together some of our personal favorite spirits and flavors to give a sweet twist to the classic bitterness of the Negroni.

Speed Rack is something of a female-driven phenomena in our business, and we're proud to have one of our own compete to raise awareness around breast cancer research; from the Speed Rack website: "...founded in February of 2011, [Ivy] Mix and [Lynnette] Marrero have been able to shine a spotlight on female mixologists thriving behind bars around the country; and while they are at it, raise money for breast cancer research, education, and prevention... The idea was to create a cocktail competition for the ladies -one that celebrated women, was created by women and supported women; in and out of the spirits industry. In their first year, Speed Rack met over 200 bartenders across the country and raised over $69,000."

The Esquire Tavern team is proud to announce that we have been nominated for a James Beard Award for Outstanding Bar Program. Along with bars lauded as best in the nation (and even, depending who you ask, the world), we will vie for the prestigious award, announced on March 15. 

When asked by Ed Tijerina of the SA Express News, our fearless leader Chris Hill said simply, "The nomination in itself is an honor. We're simply thrilled to be nominated. To be nominated twice is sweeter." You read that right... TWICE. Our first nomination was back in 2012, and we're thrilled to be amongst bars like Anvil Bar & Refuge in Houston, and the Dead Rabbit, in the Big Apple. 

We're not the only San Antonio-based operators to be nominated; Chef Steve McHugh of Cured at the Pearl was also nominated in the category of Best Chef-Southwest... This is his second nomination as well.

On December 5th, 83 years ago, those dastardly chains of prohibition were finally lifted, and The Esquire Tavern opened its doors to San Antonio locals. Serving up ice cold beer and scandalous (so it's rumored) entertainment, The Esquire solidified itself as a San Antonio Riverwalk institution. Enthusiastically serving locals and tourists alike since then, it's grown into a beacon of food and booze for those hungry for both.

The Esquire Tavern welcomes you to imbibe our annual offering to the tiki gods! Every year, Texas barsmiths create menus of colorful, flavorful, eccentrically garnished cocktails- all in ode to the religion that is TIKI. Tropically inspired cocktails are at the center of the tiki movement, and are served as a ritual – not just a drink – involving juices (and even chunks) of exotic fruits and even real flowers as garnish, exciting swizzle sticks, and occasionally even flames.

Our cocktail menu will feature a smattering of classic cocktails, including a Pisco Sour, Sazerac, and Bee’s Knees, as well as traditional Brunch tipples like our Bloody Mary or Margarita, and $1 of every cocktail purchased from our Brunch menu will benefit Dress for Success, by way of The Barman’s Fund. Dress for Success San Antonio is an organization that targets the needs of low-income women by promoting economic security and self-sufficiency to break the chains of generational poverty through job preparation, employment retention and career development programs. The Barman’s Fund operates on one simple philosophy: ‘[we figure] that most community charities would much rather have 6 hours of tips than 6 hours of us washing dishes,’ so The Barman’s Fund gathers bartenders who are willing to donate their tips from one designated shift to a charity, so our servers and bartenders participating in the Barman’s Brunch will be donating their tips to Dress for Success San Antonio. Last year’s Lucha Limón event was such a success that we’re bringing it back- with a vengeance! Will YOU be the one to squeeze chingos of limes right into Esquire Tavern history as this year’s reigning Luchador Limón? Here’s how it works: arrive at the Tavern, biceps blazing, ready to squeeze all the limes you can in 1 minute. After paying your $10 entry fee, you’ll challenge your favorite bartenders at one of the most essential bar tasks! You have the chance to win some amazing swag, like rare tequilas y mezcales, gift certificates, y mas… Not to mention you’ll be reigning Luchador Limón Champ!

We’ve developed an amazing cocktail menu especially for this event using products from our sponsors: Pioneer Wine & Spirits, Hennessy/Belvedere, Kappa Pisco, Compass Box, and Aviation Gin. All cocktails on this menu will be priced at $8, and $1 of each purchase will also go directly to TIP, as well as all raffle ticket and entry fee monies. Speed Rack Returns – Put Our Bartenders to the Test

Speed Rack is returning to the Alamo City as the best female bartenders in Texas duke it out in this extreme test of speed and accuracy, and two of Esquire’s own are competing for the title of Miss Speed Rack Texas. Guests are invited to The Esquire Tavern to put these ladies to the test! Practice sessions will occur on Tuesday, January 5th; Wednesday, January 6th; Sunday, January 10th; and Monday, January 11th and begin at 8 p.m. running til midnight. Guests will receive four Speed Rack competition cocktails from the list provided at the bar for only $20 – made in 2 minutes or less!!

Best San Antonio Riverwalk Restaurants: We’re Getting a Lounge

In the near future, we won’t just have an upstairs bar. We’ll be the proud owner of a new downstairs lounge—another reason we’re one of the best San Antonio Riverwalk restaurants around!

You see, The Esquire is secretly refitting the old River level. We’re making plans to remodel our basement (all 3,000 square feet of it), and turn it into an intimate lounge and hangout spot for San Antonians just like you.

Word has it this lounge will have limited seating, a separate cocktail menu and some small-scale eats. It will have the same unique throwback feel as our upstairs bar, only it will offer more room, more bartenders and more seating for our guests. Since other Riverwalk bars are notoriously crowded with wall-to-wall people, we think this will offer a welcome respite from other options in the area.

Welcome Expansion

Just like in the original Esquire Tavern bar, if you head to our downstairs area, you’ll still find our fine cocktails, well-crafted beers and Prohibition-era drinks, and we’ll offer even more wines than we currently do.

Plus, we’ll offer tasty bites and small plates to feed your cravings while you’re here. Our chef Brooke Smith and her culinary team will serve up delicious and satisfying food every time you come. Also, Chef Brooke recently did a stage at TÊTE Charcuterie in Chicago. Could charcuterie be part of the new offerings? Let’s wait and see . . .

Currently, we’re going through the permitting process to get approval for our new basement lounge. Our goal is to have the place designed, remodeled and ready to open to the public in the near future.
